                     Bonjour Mes Amis



        I am a south Louisiana native with spanish and  french heritage. I have  earned a bachelor degree in Business Administration (human resource management) from Nicholls State University  in Thibodaux, Louisiana
    Currently I am living in Lafourche  Parish. It is a beautiful parish  with a semi humid climate with its' abundant fresh  and salt waterways allows water fun (boating,skiing )or  allows easy sport or commercial fishing .  I love catching choupique,( fresh water bowfin fish), bass, perch (patassa), catfish (barbue), gar-fish, trout (truite)  and many others.
    Lafourche cajun culture( which includes the cajun cooking, cajun humor and  cajun music) with its unique traditions like Mardi Gras, and the  friendliness of the people make it difficult to leave. A visitor to Lafourche  find a  unusual animals  living in the swamps like alligators (cocodrie/caiman), and  nutria (a aquatic rodent).  One major crop is sugar cane.  Sugar cane is grown, process and transported to be refined  all over the world.   A by-product of the process is good boil cane syrup.
    On  any weekend  it common to observe families having fish fry, or boil crawfish (ecrvisses), shrimp (chevrolet) ,or crabs  under their car porches. Cajun people love to eat almost everything.
        Visiting  South Louisiana is similar to going to a foreign country. I  will  attempt to assist you with the language. Help you  find cajun recipes, cajun humor and some interesting sight to visit. Hope you enjoy your visit to my world

One day Boudreax and Thibodaux were watching TV. A good commerical about a movie on and it said, "Coming to a threatre near you." Boudreaux looked at Thibodux and said, "Thib, How they know where we live?"

One day Boudreax Gauthreaux and Thibodaux arrested put in the parish prison. They escape from the prison, they decide to hide in a barn. Thibodaux said, "Let hide in the barn in the hay stack." Gauthreaux said "That the frist place they gona look for us. Lets hide in these potato sacks." Boudreaux and Thibodaux agreed to hide in the sacks. About a hour later the sheriff see the barn . He told his deputy, "They are hiding in that barn. Check the barn for Boudreaux, Thibodaux,and Gauthreaux." Sheriff told his dupty, "Look for them the hay stack." "Nothing in the hay," stated the deputy. Just as they were going to leave the Sherriff see the sack. Sheriff pointed to the potato sacks. The deputy kicked the first sack. Gauthreaux said "Meow,meow." The Sherriff said, "That ok that a sack of cats." "Kick the next sack." Thibodaux in slow voice said,"Bow wow." The sheriff, "That ok that a sack of dogs." The deputy kicked the last sack. Boudreaux, said "potatoes"

Roux
Most cajun foods start with a Roux.

What is a Roux?

Roux is flour browned in shortning.(give food a nutty taste.) Cajuns use the basic roux to make sauces and gravies.

How to make a roux?

Proporation are two part flour(do not use self-rising) for one part oil(shortening)
Place oil in a heavy pot (case iron best).
Sprinkle the flour evenly over the surface of the hot shortening. That reduces the lumps.
Stir the flour (carefully) constantly until the roux is the desires colors.Do not cook roux on high fire.
If your roux is the color of a brown grocery bag is light.
If your roux color of of bitter chocolate that is a dark roux.
If your roux is the light in color you can add a little Kitchen Boquet to get desired color.
All liquids that you add to a roux should be hot. Pour the liquid slowly into the roux.
If you over brown(burnt smell)a roux,get rid of it .. start over

For those who on Low-fat diets (Oil-less Roux)
Spread in a thin layer the four on a cookie sheet and place in over at 350. Turn or stir,watch to get the right color.

In most dishes I used the trinity plus garlic, parsely, green onions,hot sauce("TASBASCO"), chicken or beef broth and other spices

The Cajun are descendent of the french people who were exciled from Nova Soctia(Acadia) when the British bought the land from France in 1713 The British not only took their lands by force, harassed and persecuted which forced them to leave. In 1755 some of the exciled french people came to live in Louisiana along it's bayous and prairie.They are called Cajun.

Creole
Creole in Louisiana, the term refers to both the Spaniards and French who ancestors came to Louisiana directly from Europe.

Acidian

Acidian applied to all the descendants of the oginial Acadians regardless of where they now live.

What is a parish?
It is a county(division of state in government or community) It name samilar to the Catholic church parishs(local church community).
